Produced from only the purest, filtered Hebridean water, and collected from the fast flowing sound between the picturesque fishing village of Port Wemyss and the lighthouse island of Orsay. Our salt is sustainably hand-harvested, sun-dried, and untreated, allowing the unique mix of minerals from this area of Islay to give the salt it’s unusual texture and extraordinary flavour.

We work closely with local day boats to source some of the very best shellfish in Scotland. Brown Crab, lobsters, Scottish squid mackerel, monkfish, scallops, mussels and West coast langoustines are amongst our favourites.
